Lot’s of “things” breakdown and we try to repair most all that does. These Niki “Airs” were given to us and the soul was coming off. So…..we fixed it. We do quite a bit of fixing things because most of what we have is old, and we can not afford to keep buying new stuff.

Today we’re making a 2-gallon batch of cultured mozzarella. When the curd mass is ready to be stretched, we’ll form it into 1-lb packages and put it in the freezer. Then we can thaw a package and stretch the curds whenever we want fresh mozzarella!
On July 10 we made our first Parmesan cheese, using 3 gallons of milk. We don’t have a cheese press, so we pressed it overnight with some free-weights a visitor left here after his 2-week retreat.
